Pork Tenderloin with Fig & Balsamic Marinade
1½ to 2 pounds Pork Tenderloin
½ cup Girl & the Fig Fig Balsamic Vinegar
¼ cup soy sauce
1 clove garlic, minced
1 tablespoon chopped parsley
Girl & the Fig Red Onion Confit
Combine above and marinade tenderloin for 4 hours, or overnight.
Preheat barbecue grill to high. Place marinade in a small saucepan and bring to a boil. Lower grill temperature to medium, and cook tenderloins for 6 minutes per side, basting with marinade. Rest - covered - for 5 minutes before slicing.
Top with Girl & the Fig Red Onion Confit.
