We carefully monitor each vineyard block and harvest the fruit when it reaches the optimum balance between fruit characters and acidity. Careful hand-sorting ensures that only the most pristine grapes move on to whole-cluster pressing in our Coquard presses. These uniquely gentle presses - the only modern working Coquard presses outside of France - minimize the extraction of harsh components from grape skins.
Our white wines are fermented in a combination of stainless steel tanks and oak barrels. Depending on
wine varietal and vintage conditions, a portion of each white wine undergoes malolactic fermentation in barrel,
adding rich complexity and depth to the finished wine.
